Healthy Butternut Squash Pizza Recipe With Spinach and Fontina!
At first this recipe may not seem like the most healthy or delicious of all dishes.
However I urge you to try it!
Then I will urge you to put the 3rd slice down. And probably be needing to urge you to save that final slice for later!
The nutty, earthy taste of the squash is highlighted with sharp roasted tones. After a few minutes in the fiery hot oven our roasted squash begins to grill and caramelizes. This enhances the flavor even further.
So too does the onion, which has become even sweeter and stickier and is now blending with the tangy zesty Fontina cheese grill!
In just a few moments you have crispy wholemeal or whole wheat bread base, covered with melted cheese and golden caramelized onions.
All nestled amongst gorgeous green irony tangs of spinach and sizzling grilled butternut squash.

Ingredients
- 1 butternut squash
- 1 red onion
- 1 tbsp olive oil
- 5 cup baby spinach
- 1 lb pizza dough fresh, whole wheat
- 1 cup fontina cheese grated
- 2 Tbsp pine nuts toasted
Instructions
- Preheat oven to 360°F. Coat a pizza stone ( or a baking sheet with cooking spray). Cut 1 butternut squash into half, length-way, and scoop out the seeds. Place the squash, flesh side down, on prepared baking sheet and roast for 30 minutes. Turn the squash halves flesh side up and roast until very tender – approx. 25 minutes. Once cooled scrape the squash flesh into a bowl and mash.
- While the squash is baking fry the 1 red onion in 1 tbsp olive oil. Use a large fry pan over medium-low heat, stirring, until lightly browned – approx. 20 minutes. Transfer to bowl. Increase the heat to medium and coat the fry pan with cooking spray. Add 5 cups baby spinach and cook, stirring, until wilted – approx. 2 to 3 minutes.
- If using a pizza stone place it on a rack in the center of your oven and increase heat to 420°F – a baking sheet can be used if not using a baking stone.
- Using freshly prepared – or thawed earlier prepared 1 lb pizza dough – flour lightly and roll into a circle, â…› to ¼ inch thick, on a piece of parchment. Spread about 1½ cups of the squash over dough. Top with onion and spinach. Slide parchment and pizza onto a cool baking sheet and carefully slide the parchment directly onto pizza stone or heated baking sheet. Bake until bottom is golden – approx. 7 minutes.
- Then top with 1 cup fontina cheese and 2 Tbsp pine nuts and bake until cheese melts – approx. 1 -2 minutes. Cut into 8 slices and enjoy!
