  • First place the 4 green cardamom pods into a pestle and mortar and gently squash the pods. This helps open the pod and release the oils. There is no need to grind them finely, just crush them so the pods have split.
  • Add the crushed pods and the remaining ingredients, 200 ml water, 1/2 inch ginger root, 1/2 tsp ginger powder, 1 tsp cinnamon powder, 1 tbsp black tea leaves, and 300 ml milk but not the honey, to a small saucepan. Bring to a boil. Cover and lower the heat to a very gentle simmer. Allow the tea mix to simmer for 9 to 10 minutes or until the tea is a rich caramel brown color.
  • Remove from the heat. Strain the tea to remove the solid spices and tea leaves. Pour half into a mug and add a 2 tsp honey (optional). This recipe makes 2 serves. Drink daily. Morning and evening.
