Coconut Cream Chicken & Mushroom Ragout
- 1.25 lb chicken breast sliced
- 1 tbsp olive oil extra virgin
- ¼ tsp sea salt
- ¼ tsp black pepper
- 1 cup mushrooms washed, sliced
- ¼ cup white onion chopped
- 1 shallot finely diced
- 1 cloves garlic minced;
- ½ cup white wine or vegetable broth
- 1 tbsp vinegar
- 14 oz coconut milk canned or fresh
- 2 tsp flour
- 2 tbsp butter softened
- 6 thyme whole sprigs, fresh
- 2 nutmeg grated or powder
- Slice the chicken breasts and add to a bowl with 1/8 teaspoon salt and 1/8 teaspoon pepper. Stir til mixed.
- Place 2 teaspoons of olive oil into a pan and heat.
- Once oil is warm but not smoking, add chicken pieces.
