Heat a large heavy bottom saucepan over a medium heat. Lightly coat the base with a little cooking spray. Add the diced onions, red and green peppers, minced ginger and garlic and sauté gently until the vegetables are soft - approximately 4-5 mins.
Add the chicken, beans, tomatoes and chicken broth. Cover and bring to a simmer over medium heat. After 5 mins stir in the chili powder, cumin, oregano and cayenne pepper. Simmer for 10 minutes.
To Serve, Ladle into bowls and sprinkle with cheese, cilantro, parsley and spring onion

This is one of those recipes where you can add a little bit more of one, and less of another to match your tastes.Don't like cilantro? Don't add it. Like it hot hot hot? Add more chili. A really easy, delicious and healthy dish.
