Whole food artichoke and spinach dip is a delicious and nutrient rich dish. Artichokes and spinach are both packed with essential nutrients. Artichokes are a good source of dietary fiber, vitamin C, vitamin K, folate, and potassium. Cook the 10 oz. spinach and let it cool. Once its cool pat dry to remove any excess moisture. Drain the artichoke hearts, roast your 1/2 cup red pepper, and chop the2 jalapenos and 1 spring onions. Add all of these to a food processor and blitz until you reach your desired consistency.
In a large bowl add the mix from your blender and the remaining ingredients, 3/4 cup light mayonnaise, 3 tbsp parmesan cheese, juice of 1/2 lemon. Mix thoroughly.
Season with sea salt and black pepper and refrigerate for at least an hour

If you like more spice you can use additional jalapenos.
