Our healthy take on the classic Mexican breakfast. Huevos Rancheros, translated as "ranch eggs" are fried eggs served on hot corn tortillas and smothered in cooked salsa. So we just remove those tortillas and a lot of the oils and fats! Trust me, it is just as good. Some would say better, and I agree!When you start to eat them, wow the taste is incredible. The egg yolk is nice and runny and it mixes in with the salsa and beans. It is just incredible! The recipe is also really flexible. You can use canned salsa, or make your own. Or add a few freshly chopped tomatoes or for that extra spicy heat add chopped jalapeños and mix through your salsa or sauce. Enjoy!
Drain the 1/3 cup black beans and rinse well. Heat the beans in small saucepan
In a fry pan add 1/4 tsp olive oil. Once the oil is hot add the 2 eggs and fry to however you like them
Plate the beans. Place the eggs upon the beans. Spoon the 2 Tbsp salsa or Pico de Gallo over the eggs. Sprinkle the grated 1 tablespoon cheddar cheese on top
Finish with hot sauce (Optional). Easy and absolutely delicious.

So easy and so simple. Delicious! You can even make it with scrambled eggs (or Huevos a la Mexicana as translated) if you're not a fan of fried!
